The other night I cleaned out our fridge a little bit. As the weather is getting colder now, I thought it would be a nice idea to make a soup. I chopped up some carrots, a few japanese radishes I bought at the farmers market and an onion and roasted them in my new dutch oven – what a great investment. I have been thinking of getting one for the longest and finally ordered one a few weeks ago.
Once all those veggies were nicely browned, I added a lonely potato and filled up the pot with about 2 liters of water. to give it some extra flavor, I cheated a bit with some instant vegetable broth and seasoned it with salt, pepper and cayenne. I also had some italian parsley left over from the other day and added some of those leaves as well. For the last few minutes, I cooked pasta with it to make it more filling. The final touch were a few strips of bacon that I chopped up to give it a little extra kick.
It is definitely a good and healthy option, I do the same sometimes 🙂
