I found the recipe on a blog (unfortunately, I cannot find the link anymore…) and as I wanted to try a cauliflower dough for quite some time, I made those two weeks ago. super easy recipe, healthy and de-li-cious
you chop up a head of cauliflower (or put it in the food processor) and roast it in the oven at 450F for about 20 to 25 min. strain the cauliflower in a dish towel and let it cool down for a while until it is cold enough to squeeze. and I mean squeeze – as hard as you can, the cauliflower should be really dry at the end.

once the ‘flour’ was ready, I added one egg, half a cup of grated cheese (I will use really good cheese next time, gruyere, fresh parmesan or peccorino), salt, pepper and some herbs. it really depends on your liking, I added some oregano and a spice mix I got in savannah. next time, I will also add garlic, one clove, pressed. mix it all with a spoon or fork, it might seem a little loose, but will bake perfectly. I spread it out on a baking sheet and let it bake at 400F for about 20 min and added another half a cup of grated cheese for a nice cheese crust. after another 5 minutes, I put it under the broiler for about 2 or 3 minutes. and voila:
